Cordyceps sinensis is a parasitic fungus from the Ophiocordycipitaceae family. It occurs naturally on the Tibetan Plateau at high altitudes (around 3,000–4,000 metres above sea level). Traditionally, it develops using caterpillars of moths from the genus Thitarodes found underground; the mycelium grows towards the surface and forms a club-shaped fruiting body. Cordyceps has a slightly bitter taste and a meaty smell, and it is also cultivated on an industrial scale using biotechnological methods and artificial substrates.
